Before he opened his private training gym in midtown five months ago, John Sitaras studied with a pain specialist at Lenox Hills Hospital to develop a no-injury strength-training methodology. The process (from $150 per month) begins with several one-on-one assessments; then Sitaras develops a few different routines, focusing on weights. The routines are no-frills, but the high-design space is amenity-filled; members are handed bottles of VOS or Poland Spring on arrival and the locker rooms have giant terrazzo shower stalls and built-in keypads on lockers.

Competition breeds the best. If only one pizzeria existed in New York, of course, there’d be no real winning slice. Thankfully, we’ll never know what that sorry situation tastes like, since pizza—like dance parties, dog runs, and fried chicken—has to evolve upward here.
